Colorado Farm-to-Glass Collaboration Root Shoot Spirits has released a limited-edition Colorado Peach Brandy Cask Finished Whiskey, a seasonal collaboration with Peach Street Distillers. The release marks the first time the Loveland-based distillery has finished its American single malt in barrels sourced outside its own operations. The whiskey begins with Root Shoot's 4-year American single malt, made entirely from barley sown, grown, and malted on the Olander family farm in Loveland. The spirit is then finished in peach brandy casks from Peach Street Distillers, whose brandy is produced from Colorado-grown Palisade peaches. "Everything we make starts on the farm, so finishing our American Single Malt in Colorado peach brandy casks was a natural fit," said Todd Olander, Root Shoot's farmer and founder. "It's a whiskey that celebrates two of Colorado's greatest crops, barley and peaches, and the farmers who grow them."

Flavor Profile and Availability The whiskey opens with aromas of cobbler, honeyed granola, and clean alpine florals, followed by notes of rich pastry, faint cocoa dust, and spicy botanicals. The peach brandy finish layers Palisade peach character with the malt and spice of the base spirit. The limited release is bottled at 49% ABV with a suggested retail price of $70. Only 480 bottles have been produced. The whiskey is available now at retailers across Colorado, with online sales to follow at buy.rootshootspirits.com, subject to availability and state laws.
